Lemon chicken with Articoke Hearts

  • 2 tbsp olive oil
  • 1/2 medium onion, finely chopped
  • 3 medium garlic cloves, thingly sliced
  • 1 1/2 pounds bonless chicken meat, large dice
  • 1 1/2 cup quartered articoke hearts (canned or jarred)
  • 2/3 cup chicken broth
  • 1/3 cup water
  • 1 tsp lemon juice
  • 1/2 cup lightly packed thinly sliced basil leaves
  • 1 tsp lemon zest
1. Heat oil in large frying pan over medium-high heat.
2. Saute onions and garlic, season with salt and pepper until golden - about 4 minutes
3. Add chicken and cook until its well browned on all sides - about 5 minutes
4. Add articoke hearts and cook until slightly broken down - about 4 minutes
5. Add chicken broth, water, juice and scrape the bottom of the pan to incorporate the browned bits
6. Cook until sauce has been slightly reduced - about 5 minutes
7. Remove from heat, sitr in basil and lemon zest

SERVE!

Didn't take a picture cause it looked really weird :/ Next time Ima bake the lemon chicken, and take a pic :)

Sugarless Applesauce

  • 5-6 medium apples
  • 3/4 cup water - but more if you like yours more watery
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon
*When choosing apples for a sugarless applesauce, make sure to choose sweet apples, and choose different kinds. Don't choose something sour like Granny Smith. When I made this, I halved the recipe and used 2 Royal Gaia and Golden Delicious Apples.*

1. Core and chop apples. I don't peel my apples, but whatever you like.
2. Put apples, water and lemon juice in saucepan. Heat to boiling, then turn down to medium.
3. Simmer apples until soft, 15-20 minutes.
4. Mash if apple pieces are still not mushed.
5. Add cinnamon.

Tastes best served warm :)

Diabetic Applesauce Cake

  • 1 cup whole wheat flour
  • 1/2 cup wheat germ - can be substituted with flour for more cakey cake
  • 1/2 cup rolled oats - can be substituted with flour for more cakey cake
  • 1 tsp baking power
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp nuteg
  • 1/2 tsp salt
  • 1 3/4 cup unsweetened applesauce
  • 1/2 cup brown sugar or substitute for sugar (use less if you want, I did)
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 cup chopped apples, raisins or nuts
1. Preheat oven to 350 F
2. Beat eggs until light and add sugar/sub sugar. Then add in applesauce and vanilla.
3. Add flour mixture to wet and beat until smooth. Fold in apple/raisin/nuts etc.
4. Pour batter in pan:
Cake tin: 30 minutes
Tube pan: 25-30 minutes
Loaf pan: about an hour
OR, until a toothpick inserted into cake comes out clean.
*Times may more few minutes off depending on oven and tin materials.

~~Note that this is a diabetic cake. I suggest no sugar be used at all for a diabetic because I am not a fan of substitute sugars like Splenda. This cake still tastes good even if sugar isn't used - as long as you don't have a super sweet tooth.



OKOK. I KNOW that it doesn't look good. at all >.>
BUT BUT. IT TASTED REALLY REALLY GOOD. I SWEAR.
and it tasted a little more like a muffin. BUT STILL GOOD.

Chicken Patties

  • 1.5 lb ground chicken (I actually just chopped up chicken)
  • 1/2 cup breadcrumbs
  • 1/4 cup wheat germ
  • a small onion - or half a big one
  • 2 garlic cloves
  • 3 tbsp cilantro, minced (original recipe called for this, but i didn't use. patty seemed fine)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • salt and pepper
  • 1 egg
1. Mix all ingredients together except for egg, until combined. Then add egg and mix.
2. Form as many patties as you want depending on size (I made 6 medium patties with this).
3. For this patty, you can use whatever way you want to cook the patty.
Pan Fry: Heat 2 tbsp oil to medium heat. Cook on both sides for 5 mins each side depending on size.
Grill: On a grill with oiled racks, grill patties for 4 mins on each side.
Oven: (I haven't tried this yet, but I would suggest 350 F for 12 mins ish, flip in between.)

Wheat Germ Crackers

Haven't posted in a long time, but here's a semi healthy snack.
  • 5 tbsp oil
  • 1/3 cup butter
  • 1 tbsp brown sugar
  • 3 tbsp water
  • 3/4 cup whole wheat flour
  • 1/2 cup oats
  • 2/3 cup wheat germ
  • 1/2 tsp salt
1. Preheat oven to 350F
2. Blend oil, butter, sugar and water
3. Stir in flour, oats, wheat germ and salt
4. Mix well - it will be a little oily
5. Knead dough and shape into ball
6. Roll out to 1/8 inch thickness on an unfloured board
7. Cut into shapes or use a cookie cutter
8. Use either parchement paper or ungreased baking pan. Bake for 12-15 minutes until golden brown

Lemon Yogurt Muffins

  • 1 1/2 cup whole wheat flour
  • 1 cup rolled oats OR 3/4 cup rolled oats & 1/4 cup flax seeds
  • 1/3 cup granulated sugar (i used 1/4)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cup plain yogurt
  • 1 egg
  • 1/4 lemon juice
  • 1 lemon, peeled and FINELY chopped
1. Preheat oven to 400F
2. In a large bowl, mix together flour, oats/flax seeds, sugar, baking powder&soda, salt.
3. In another bowl, mix together the yogurt, egg, lemon juice and chopped lemon
4. Add the wet ingredients to the dry, mixing ONLY until blended. DO NOT OVER MIX.
muffins won't look awesome if you over mix ):
5. Fill muffins cups 2/3 high
6. Bake for 20 minutes, or until toothpick inserted into the center of the muffin comes out clean

Mango Banana Smoothie

  • 1 mango
  • 1 banana
  • 1/4 ~ 1/2 cup of plain yogurt
  • 1 tbsp whey protein powder
  • ice
Just blend everything together until it's smooth.

Great after workout snack
