Chickpea burger

  • 2 cups chickpeas - if you're not using canned, make sure to soak for at least a day
  • 1 carrot, grated
  • 1/2 onion, minced
  • 2 button mushrooms, chopped
  • 1 garlic, minced
  • 1/4 cup wheat germ
  • 1/4 cup breadcrumbs
  • 2 tbsp cumin
  • 1/2 tsp hot chili powder
  • 2 eggs
  • 1/4 cup Parmesan (optional)
  • 2 tbsp cheddar or mozzarella (optional)
  • pepper (optional) NO SALT
  • flax seeds (optional)
  • oil for frying (optional)
1. Rinse and drain chickpeas
2. Strain the veggies
3. First mash the chickpeas, then
add veggies and continue mashing
4. Add wheat germ, breadcrumbs, cumin, hot chili powder, pepper, flax seeds, and cheeses, and mix in.
5. Add the 2 eggs.
6. Make the patties
7. If frying, add oil on pn pand fry on each side for about 7-10 minutes on medium-heat high, until heated through and sides are browned
8. If baking, bake at 375 degrees for 10 minutes on each side.

Whole Wheat Pancakes

  • 1 1/2 cup whole wheat flour
  • 3/4 cup wheat germ
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3-4 tbsp brown sugar
  • 1 1/2 ~ 1 3/4 buttermilk
  • 2 tbsp olive oil
  • 1tsp vanilla essense
  • 2 eggs
1. Whisk dry ingredients together
2. Mix wet ingredients together
3. Slowly mix wet ingredients into dry until blended.
4. Heat gridle or frying pan over medium-high heat. Spray pan with oil spray.
5. Pour/scoop 1/4 cup batter. Brown on bth sides, turning once.

Serve with fruits :)

HEALTHY Banana Blueberry Muffins

  • 1 3/4 cup whole-wheat flour
  • 1/4 cup wheat germ
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1/3 cup granulated sugar
  • 1/3 cup packed light-brown sugar
  • 2 large eggs
  • 2 ripe bananas (about 1 pound)
  • 1/3 cup reduced-fat (2 percent) milk
  • 1 tsp pure vanilla extract
  • 1 cup frozen blueberries
1. preheat oven to 375 F
2. whisk dry ingredients together
3. beat butter and sugar together until its fluffy. then mix in eggs, beat. Mash bananas and add in and beat. Then mix in milk and vanilla extract.
4. with mixer on low, add dry ingredients to wet ingredients.
5. fold in blueberries.
6. bake for 24-27 minutes. its r
eady when you insert a toothpick and it comes out clean.

makes around 2 dozen regular muffins.
