Lemon chicken with Articoke Hearts

  • 2 tbsp olive oil
  • 1/2 medium onion, finely chopped
  • 3 medium garlic cloves, thingly sliced
  • 1 1/2 pounds bonless chicken meat, large dice
  • 1 1/2 cup quartered articoke hearts (canned or jarred)
  • 2/3 cup chicken broth
  • 1/3 cup water
  • 1 tsp lemon juice
  • 1/2 cup lightly packed thinly sliced basil leaves
  • 1 tsp lemon zest
1. Heat oil in large frying pan over medium-high heat.
2. Saute onions and garlic, season with salt and pepper until golden - about 4 minutes
3. Add chicken and cook until its well browned on all sides - about 5 minutes
4. Add articoke hearts and cook until slightly broken down - about 4 minutes
5. Add chicken broth, water, juice and scrape the bottom of the pan to incorporate the browned bits
6. Cook until sauce has been slightly reduced - about 5 minutes
7. Remove from heat, sitr in basil and lemon zest

SERVE!

Didn't take a picture cause it looked really weird :/ Next time Ima bake the lemon chicken, and take a pic :)

  1. ooo... i am a super fan of sweet and sour food! sigh. i want the Lemon Chicken sooooo badly right now. with rice.

    Here I bought a sauce pack so as to skip all the seasonings! and i will try this friday after work.
