Lemon Yogurt Muffins

  • 1 1/2 cup whole wheat flour
  • 1 cup rolled oats OR 3/4 cup rolled oats & 1/4 cup flax seeds
  • 1/3 cup granulated sugar (i used 1/4)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cup plain yogurt
  • 1 egg
  • 1/4 lemon juice
  • 1 lemon, peeled and FINELY chopped
1. Preheat oven to 400F
2. In a large bowl, mix together flour, oats/flax seeds, sugar, baking powder&soda, salt.
3. In another bowl, mix together the yogurt, egg, lemon juice and chopped lemon
4. Add the wet ingredients to the dry, mixing ONLY until blended. DO NOT OVER MIX.
muffins won't look awesome if you over mix ):
5. Fill muffins cups 2/3 high
6. Bake for 20 minutes, or until toothpick inserted into the center of the muffin comes out clean
